Preheat the oven to 350°F (175°C).

In a bowl, combine the all-purpose flour and salt. Cut in the unsalted butter using a pastry blender until the mixture resembles coarse crumbs.

Press the mixture into the bottom and up the sides of a tart pan. Bake for 10-12 minutes or until lightly golden. Remove from the oven and let it cool.

In a mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Spread the cream cheese mixture into the cooled tart shell.

Peel and slice the peaches. Arrange the peach slices over the cream cheese mixture.

Bake for 20-25 minutes or until the edges are set and the center is slightly jiggly.

Remove from the oven and let it cool completely. Refrigerate for at least 1 hour.

Serve chilled, garnished with whipped cream and mint leaves (optional).
