In a mixing bowl, combine cream cheese, ricotta cheese, sugar, and vanilla extract. Mix until smooth.

In a separate bowl, beat the eggs. Gradually add the beaten eggs to the cheese mixture, stirring well.

Heat a non-stick skillet over medium heat. Add 1 tablespoon of butter and let it melt.

Pour 1/4 cup of pancake batter onto the skillet and spread it evenly to form a thin pancake.

Cook the pancake for about 2 minutes until the edges start to brown. Flip the pancake and cook for another 1-2 minutes.

Remove the pancake from the skillet and place it on a plate.

Spoon about 2 tablespoons of the cheese mixture onto the center of the pancake.

Fold the sides of the pancake over the filling, then roll it up to form a blintz.

Repeat the process with the remaining pancake batter and cheese mixture.

Once all the blintzes are cooked, let them rest for 10 minutes.

Sprinkle powdered sugar over the blintzes and serve with fresh berries.
