Preheat the oven to 350°F (175°C).

In a mixing bowl, combine goat cheese, spinach, flour, eggs, milk, salt, and pepper. Mix well.

Grease four ramekins and divide the mixture evenly among them.

Place the ramekins in a large baking dish and fill the dish with hot water halfway up the sides of the ramekins.

Bake in the preheated oven for 25-30 minutes, or until the flans are set.

While the flans are baking, blanch the asparagus in boiling water for 2-3 minutes, then transfer to ice water.

In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, minced garlic, salt, and pepper to make the dressing.

When ready to serve, remove the flans from the water bath and allow them to rest for 10 minutes.

Run a knife around the edge of each ramekin and invert the flans onto plates.

Arrange the asparagus on top of the flans and drizzle with the dressing.

Serve warm.
