Boil the potatoes until tender, then mash them.

Grate the cheddar cheese.

Finely chop the onion and sauté it in butter until translucent.

In a large bowl, combine the mashed potatoes, grated cheese, sautéed onion, flour, egg, and salt. Mix well to form a dough.

Divide the dough into small portions and roll each portion into a thin circle.

Place a spoonful of the potato-cheese filling in the center of each circle.

Fold the dough over the filling and press the edges to seal.

Bring a large pot of salted water to a boil. Cook the pierogies in batches for about 5 minutes, or until they float to the surface.

Remove the cooked pierogies from the water and drain.

Serve hot with sour cream.
