  1. Preheat the oven to 180°C.
  2. Heat oil in a pan and sauté the chopped onion until translucent.
  3. Add chopped capsicum, tomato, and green chili. Cook for 2-3 minutes.
  4. In a bowl, beat the eggs. Add salt, black pepper powder, and coriander leaves.
  5. Add the sautéed vegetables to the egg mixture and mix well.
  6. Roll out the puff pastry sheet and cut it into squares.
  7. Place a spoonful of the egg mixture in the center of each square.
  8. Fold the pastry over the filling to form a triangle and seal the edges.
  9. Place the egg puffs on a baking sheet lined with parchment paper.
  10. Bake for 15-20 minutes or until golden brown.
  11. Serve hot and enjoy!
