  2. Roll out the puff pastry and cut into desired shapes.
  3. Place the puff pastry shapes on a baking sheet lined with parchment paper.
  4. In a bowl, mix the cream cheese, sugar, and vanilla extract until smooth.
  5. Spread the cream cheese mixture onto the puff pastry shapes.
  6. Arrange the assorted fruits on top of the cream cheese.
  7. Bake in the preheated oven for 15-20 minutes or until the puff pastry is golden brown.
  8. In a small saucepan, heat the apricot jam until melted.
  9. Brush the melted apricot jam over the fruit tarts.
  10. Allow the tarts to cool before serving.
