Brazilian Quindim

In a mixing bowl, whisk together the egg yolks and sugar until well combined.

Add the shredded coconut, butter, vanilla extract, and water to the bowl and mix until smooth.

Grease a round cake pan with butter and sprinkle with sugar.

Pour the mixture into the prepared pan.

Place the pan in a larger baking dish filled with hot water to create a water bath.

Bake for 40 minutes or until the top is golden brown and the center is set.

Remove from the oven and let it cool in the pan for 10 minutes.
