Nectarine, Peach and Blackberry Cake
Nectarines and peaches belong to the same species, but nectarines have a smooth skin while peaches have a fuzzy skin.

Preheat the oven to 180°C (350°F). Grease and flour a round cake pan.

In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

In a separate bowl, combine the flour and baking powder. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.

Gently fold in the nectarines, peaches, and blackberries.

Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

Serve the cake as is or dust with powdered sugar before serving.
