Peel and dice the sweet potatoes into small cubes.

Heat olive oil in a large skillet over medium heat.

Add onion, garlic, and red bell pepper to the skillet and sauté until softened.

Add the sweet potatoes, corn kernels, black beans, ground cumin, paprika, salt, and black pepper to the skillet.

Cook for about 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.

Remove from heat and garnish with fresh cilantro.

Serve hot with lime wedges on the side.
