  3. Gradually add the caster sugar while continuing to whisk until the mixture is thick and glossy.
  4. Gently fold in the lemon juice.
  5. Spoon the meringue mixture onto a lined baking sheet, forming small nests.
  6. Bake for 90 minutes, then turn off the oven and leave the meringues inside for 30 minutes to cool and crisp up.
  7. Once cooled, fill the meringue nests with assorted fruits.
  8. Serve with a dollop of whipped cream.
