  5. Drop spoonfuls of the potato mixture into the hot oil and flatten with a spatula.
  6. Cook until golden brown on both sides.
  7. Remove from the pan and place on a paper towel to drain excess oil.
  8. Serve hot with applesauce or sour cream.
