Preheat the oven to 350°F (175°C).

In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the chopped pecans.

Scoop about 1 tablespoon of dough and flatten it in your hand. Place a caramel candy in the center and wrap the dough around it, forming a ball.

Place the stuffed dough balls onto a baking sheet lined with parchment paper.

Bake for 10-12 minutes, or until the edges are set.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
