Place the puff pastry squares on the prepared baking sheet and brush the edges with beaten egg.

In a bowl, mix together creme fraiche, powdered sugar, vanilla extract, and lemon zest.

Spoon the creme fraiche mixture onto the center of each puff pastry square.

Top each square with raspberries.

Fold the edges of the puff pastry squares over the filling, forming a rustic tart shape.
