Heavenly Chocolate Sandwich Cookies
The first chocolate chip cookie was invented by Ruth Graves Wakefield in 1938 and was originally called the ‘Toll House Crunch Cookie’.

In a bowl, whisk together flour, cocoa powder, baking powder, and salt.

In a separate bowl, cream together butter and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with milk.

Divide the dough into two portions, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Roll out one portion of the dough on a floured surface to about 1/4 inch thickness.

Use a cookie cutter to cut out desired shapes and place them on the prepared baking sheet.

Bake for 8-10 minutes or until the edges are set.

Allow the cookies to cool completely.

In a mixing bowl, beat together powdered sugar and cream cheese until smooth.

Spread the cream cheese mixture onto the bottom side of a cookie.

Place another cookie on top to create a sandwich.

Melt the chocolate chips in the microwave or using a double boiler.

Dip half of each sandwich cookie into the melted chocolate.

Place the cookies on a wire rack to allow the chocolate to set.
