Preheat the oven to 325°F (163°C).

In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 6-cup muffin tin.

In a large bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add the egg and mix well.

Pour the cream cheese mixture over the crust in the muffin tin.

Bake for 15-20 minutes, until the edges are set but the center is still slightly jiggly.

Remove from the oven and let cool in the tin for 10 minutes. Then, transfer to the refrigerator and chill for at least 2 hours.

Top each mini cheesecake with sliced strawberries and whipped cream before serving.
