  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini into thin rounds.
  3. Chop the onion and mince the garlic.
  4. Heat olive oil in a skillet over medium heat. Sauté the onion and garlic until softened.
  5. In a bowl, beat the eggs and milk together.
  6. Add the sautéed onion and garlic mixture to the bowl and mix well.
  7. Stir in the breadcrumbs, Parmesan cheese, salt, and black pepper.
  8. Grease a casserole dish and layer half of the zucchini rounds on the bottom.
  9. Pour half of the egg mixture over the zucchini.
  10. Repeat the layers with the remaining zucchini and egg mixture.
  11. Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the top is golden brown.
  12. Let it rest for 10 minutes before serving. Enjoy!
