  2. Grate the zucchini and squeeze out the excess moisture using paper towels.
  3. In a large bowl, combine the grated zucchini, all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a separate bowl, whisk together the eggs, granulated sugar, vegetable oil, and vanilla extract.
  5. Add the wet ingredients to the dry ingredients and stir until just combined.
  6. Fold in the chopped walnuts.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the zucchini bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
