Zucchini Bread
Zucchini bread became popular in the United States during the 1960s and 1970s as a way to use up excess zucchini from backyard gardens.

Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.

Grate the zucchini and squeeze out excess moisture.

In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

In a separate bowl, beat the eggs. Add the vegetable oil and vanilla extract, and mix well.

Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

Fold in the grated zucchini and walnuts.

Pour the batter into the prepared loaf pan.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
