Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, mix the chocolate cookie crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition.
  4. Divide the cream cheese mixture in half. Stir the melted chocolate into one half of the mixture.
  5. Pour the plain cream cheese mixture over the crust in the springform pan. Drop spoonfuls of the chocolate mixture on top. Use a knife to swirl the two mixtures together.
  6. Bake for 55-60 minutes, or until the center is set and the top is lightly browned. Remove from the oven and let cool in the pan for 10 minutes.
  7. Remove the sides of the springform pan and let the cheesecake cool completely on a wire rack.
  8. Once cooled, refrigerate for at least 2 hours before serving.
  9. Serve chilled and enjoy!
