  1. Preheat the oven to 160°C (320°F). Grease and line a square baking tin with parchment paper.
  2. In a saucepan, melt the butter, golden syrup, and black treacle over low heat until smooth.
  3. In a large mixing bowl, combine the oatmeal, flour, baking powder, ginger, cinnamon, and nutmeg.
  4. Pour the melted butter mixture into the dry ingredients and mix well.
  5. In a separate bowl, whisk the eggs and milk together, then add to the main mixture. Stir until everything is well combined.
  6. Pour the batter into the prepared baking tin and smooth the top.
  7. Bake for 35-40 minutes or until the Parkin is firm to the touch.
  8. Remove from the oven and leave to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
  9. Once cooled, wrap the Parkin in parchment paper and leave to rest for at least 24 hours before serving to allow the flavors to develop.
  10. Cut into squares and serve.
