  3. Add the sliced carrots, potatoes, and parsnips to the skillet. Cook for 5 minutes, stirring occasionally.
  4. Sprinkle the flour over the vegetables and stir well to coat. Cook for an additional 2 minutes.
  5. Gradually pour in the vegetable stock and milk, stirring constantly. Add the thyme, salt, and black pepper. Bring to a simmer and cook until the sauce thickens.
  6. Stir in the frozen peas and transfer the vegetable mixture to a baking dish.
  7. Roll out the puff pastry sheet to fit the top of the baking dish. Place it over the vegetables, pressing the edges to seal.
