Wild rice is not actually rice, but rather the seed of an aquatic grass native to North America.

  1. Rinse the wild rice under cold water.
  2. In a medium saucepan, bring the vegetable broth to a boil.
  3. Add the rinsed wild rice to the boiling broth and reduce heat to low. Cover and simmer for 40 minutes or until the rice is tender.
  4. In a large skillet, heat olive oil over medium heat.
  5. Add the onion and garlic to the skillet and sauté until the onion is translucent.
  6. Add the cooked wild rice, pecans, dried cranberries, parsley, salt, and black pepper to the skillet. Stir to combine.
  7. Cook for an additional 5 minutes, stirring occasionally.
  8. Remove from heat and let the pilaf rest for 5 minutes.
  9. Serve hot and enjoy!
