Braised Endives With Blood Oranges, Pistachios, and Ricotta Salata
Endives are a member of the chicory family and are known for their slightly bitter taste.

Preheat the oven to 400°F (200°C).

Trim the endives and cut them in half lengthwise.

Heat olive oil in a large ovenproof skillet over medium heat.

Place the endives cut-side down in the skillet and cook until golden brown, about 5 minutes.

Turn the endives over and transfer the skillet to the oven.

Roast for 15-20 minutes, or until the endives are tender.

While the endives are roasting, peel and slice the blood oranges.

In a small bowl, whisk together honey, salt, and black pepper.

Remove the skillet from the oven and arrange the blood orange slices on top of the endives.

Drizzle the honey mixture over the endives and blood oranges.

Sprinkle with pistachios and crumble ricotta salata on top.

Return the skillet to the oven for another 5 minutes, or until the ricotta salata is slightly melted.

Remove from the oven and let it rest for 5 minutes.
