Wild rice is not actually rice, but rather the seed of an aquatic grass native to North America.

  1. Rinse the wild rice under cold water.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic cloves. Cook until onion is translucent.
  3. Add the wild rice and vegetable broth to the pot. Bring to a boil, then reduce heat to low and cover. Cook for 30 minutes or until rice is tender.
  4. While the rice is cooking, peel and slice the carrots.
  5. In a separate pan, heat olive oil over medium heat. Add the sliced carrots and cook until tender.
  6. Once the rice is cooked, fluff it with a fork and stir in the cooked carrots.
  7. Season with salt, black pepper, and parsley.
  8. Let the dish rest for 5 minutes before serving.
