Wholesome Lemon Blueberry Muffins
Blueberries are often referred to as a ‘superfood’ due to their high levels of antioxidants and various health benefits.
This is vegetarian recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, mix together the melted butter and granulated sugar until well combined.

Add the eggs, lemon zest, lemon juice, and vanilla extract to the butter mixture and mix well.

Gradually add the dry ingredients to the wet ingredients, alternating with the Greek yogurt, until just combined.

Gently fold in the blueberries.

Divide the batter evenly among the muffin cups and sprinkle with turbinado sugar, if desired.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
