Melt the white chocolate in a heatproof bowl over simmering water.

In a separate bowl, mix together the dried cranberries, mixed nuts, dried apricots, and shredded coconut.

Pour the melted white chocolate over the fruit and nut mixture and stir until well combined.

Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
