Wild rice is not actually rice, but rather the seed of an aquatic grass!

This is vegetarian and gluten free recipe. Dish can be prepared in 70 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

  1. Preheat the oven to 375°F (190°C).
  2. In a large saucepan, cook the white rice and wild rice according to package instructions.
  3. In a separate pan, heat olive oil over medium heat. Add diced onions and minced garlic, and sauté until onions are translucent.
  4. Add sliced mushrooms and cook until they release their moisture.
  5. Stir in spinach and cook until wilted.
  6. In a large mixing bowl, combine cooked rice, vegetable broth, sautéed vegetables, cheddar cheese, Parmesan cheese, salt, and black pepper. Mix well.
  7. Transfer the mixture to a greased baking dish.
  8. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the dish is heated through.
  9. Remove from the oven and let it rest for 10 minutes before serving.
