Instructions

  1. Preheat the oven to 180°C (350°F). Crush the digestive biscuits into fine crumbs. Melt the unsalted butter and mix it with the biscuit crumbs. Press the mixture into the bottom of a springform pan to form the crust.
  2. In a mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. Divide the cream cheese mixture into two equal parts. Melt the white chocolate and mix it into one part of the cream cheese mixture. Melt the dark chocolate and mix it into the other part of the cream cheese mixture.
  4. Pour the white chocolate mixture onto the crust in the springform pan. Use a spoon to create a spiral pattern. Pour the dark chocolate mixture on top of the white chocolate mixture, also creating a spiral pattern.
  5. Use a knife or skewer to gently swirl the two mixtures together to create a marbled effect.
  6. Bake in the preheated oven for 60 minutes or until the center is set.
  7. Turn off the oven and let the cheesecake cool inside for 2 hours.
  8. Remove from the oven and refrigerate for at least 4 hours or overnight.
  9. Serve chilled and enjoy!
