  1. Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just blended.
  5. Divide the batter evenly between the prepared pans. Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. Once the cakes have cooled, level the tops if necessary. Spread buttercream frosting between each layer and stack the cakes.
  8. Roll out the fondant icing on a clean surface dusted with powdered sugar. Carefully drape the rolled fondant over the stacked cakes and smooth it out.
  9. Decorate the cake with food coloring as desired.
  10. Allow the cake to rest for at least 1 hour before serving.
