Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.

In a separate large bowl, cream together the butter and granulated sugar until light and fluffy.

Beat in the egg, vanilla extract, watermelon juice, and red food coloring (if using).

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
