Warm Greek Sandwiches
The Greek sandwich, also known as ‘gyro’, is a popular street food in Greece and has gained popularity worldwide.

Preheat the grill or toaster.

Cut the cucumber, tomato, and red onion into thin slices.

In a small bowl, mix olive oil, dried oregano, salt, and black pepper.

Brush one side of each pita bread with the olive oil mixture.

Place the pita bread on the grill or toaster, oiled side down, and grill/toast for 2-3 minutes until lightly browned.

Remove the pita bread from the grill/toaster and flip them over.

Crumble the feta cheese over the grilled side of the pita bread.

Top with cucumber, tomato, red onion, and kalamata olives.

Drizzle with the remaining olive oil mixture.

Fold the pita bread in half to form a sandwich.

Place the sandwiches back on the grill or toaster for another 2-3 minutes, until the cheese is slightly melted.

Remove from heat and let them rest for 5 minutes.
