  1. Preheat the oven to 180°C (350°F) and grease a muffin tin.
  2. Roll out the shortcrust pastry and cut out circles to fit the muffin tin.
  3. Place the pastry circles into the tin and press gently to fit.
  4. Spread a teaspoon of plum jam onto the bottom of each pastry case.
  5. Arrange the sliced plums on top of the jam.
  6. Sprinkle sugar over the plums.
  7. Brush the edges of the pastry with beaten egg.
  8. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.
  9. Allow the tarts to cool before removing from the tin.
  10. Serve and enjoy!
