Mushroom soup has been enjoyed since ancient times and was considered a delicacy by the ancient Romans.

Heat butter in a large pot over medium heat. Add chopped onion and minced garlic. Cook until onion is translucent.

Add sliced mushrooms and cook until they release their moisture.

Sprinkle flour over the mushrooms and stir well.

Gradually pour in vegetable broth while stirring constantly.

Bring the soup to a boil, then reduce heat and simmer for 15 minutes.

Use an immersion blender to puree the soup until smooth and velvety.

Stir in heavy cream and season with salt and black pepper.
