  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat some oil over medium heat. Add the onion, garlic, carrots, celery, mushrooms, and cook until softened.
  3. Add the lentils, vegetable broth, soy sauce, thyme, sage, salt, and black pepper. Simmer for about 15 minutes, or until the lentils are cooked.
  4. In a small bowl, mix the flour and water to make a paste. Stir the paste into the lentil mixture to thicken it.
  5. Roll out one pie crust and place it in a pie dish. Pour the lentil mixture into the crust.
  6. Roll out the second pie crust and place it on top of the lentil mixture. Seal the edges and cut a few slits on top to allow steam to escape.
  7. Bake in the preheated oven for about 45 minutes, or until the crust is golden brown.
  8. Let it rest for 10 minutes before serving.
