Vegetarian Cassoulet
Cassoulet is a traditional French dish that originated in the region of Languedoc. It was traditionally made with meat, but this vegetarian version is just as delicious and satisfying.

Preheat the oven to 350°F (175°C).

In a large pot, combine the white beans, carrots, celery, onion, garlic, tomato paste, vegetable broth, thyme, and bay leaves. Bring to a boil and then reduce heat to simmer for 30 minutes.

In a separate bowl, combine the bread crumbs, parsley, olive oil, salt, and black pepper.

Transfer the bean mixture to a baking dish and top with the bread crumb mixture.

Bake in the preheated oven for 20-25 minutes, or until the bread crumbs are golden and crispy.
