Preheat the oven to 375°F (190°C).

Slice the eggplant, zucchini, and bell peppers into 1/4-inch thick rounds.

Chop the onion and mince the garlic.

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Add the onion and garlic and sauté until softened.

Add the sliced eggplant, zucchini, and bell peppers to the skillet and cook for 5 minutes, stirring occasionally.

Stir in the tomatoes, tomato paste, dried herbs, salt, and black pepper. Cook for another 5 minutes.

Transfer the mixture to a baking dish and bake for 20 minutes.

While the ratatouille is baking, cook the pasta according to package instructions.

Serve the ratatouille over the cooked pasta. Optional: sprinkle with grated Parmesan cheese.
