Cut the zucchini, yellow squash, and bell peppers into bite-sized pieces. Halve the cherry tomatoes.

In a large bowl, toss the vegetables with olive oil, minced garlic, salt, and black pepper.

Spread the vegetables evenly on a baking sheet and roast in the preheated oven for 20 minutes or until they are tender and slightly browned.
