  2. Crush the digestive biscuits in a food processor and mix with melted butter.
  3. Press the biscuit mixture into the base of a greased springform cake tin.
  4. In a mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth.
  5. Add eggs one at a time, beating well after each addition.
  6. Pour the cream cheese mixture over the biscuit base.
  7. Bake in the preheated oven for 45-50 minutes or until set.
  8. Remove from the oven and let it cool completely.
  9. Melt the dark chocolate in a heatproof bowl over simmering water.
  10. In a separate bowl, whip the whipping cream until soft peaks form.
  11. Fold the melted chocolate into the whipped cream.
  12. Spread the chocolate mousse over the cooled cheesecake.
  13. Dust with cocoa powder.
  14. Chill in the refrigerator for at least 2 hours before serving.
