  1. Preheat the oven to 325°F (165°C).
  2. In a saucepan, melt the sugar over medium heat until it turns into a golden caramel.
  3. Pour the caramel into a round baking dish, tilting it to coat the bottom evenly. Set aside.
  4. In another saucepan, heat the milk, cream, and scraped vanilla bean over medium heat until it starts to simmer. Remove from heat and let it cool for 10 minutes.
  5. In a mixing bowl, whisk together the eggs, vanilla extract, and a pinch of salt. Slowly pour the warm milk mixture into the egg mixture while whisking continuously.
  6. Strain the mixture into the prepared baking dish.
  7. Place the baking dish in a larger roasting pan and pour hot water into the roasting pan until it reaches halfway up the sides of the baking dish.
  8. Carefully transfer the roasting pan to the preheated oven and bake for about 45 minutes or until the flan is set but still slightly jiggly in the center.
  9. Remove the baking dish from the water bath and let it cool to room temperature. Then refrigerate for at least 2 hours or overnight.
  10. To serve, run a knife around the edges of the baking dish and invert the flan onto a serving plate. The caramel will drizzle over the top.
