  2. Add the egg yolks and cold water. Pulse until the dough comes together.
  3. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 1 hour.
  4. Preheat the oven to 375°F (190°C). Roll out the dough on a lightly floured surface and transfer it to a tart pan.
  5. Prick the dough with a fork and bake for 15-20 minutes, or until golden brown.
  6. Let the crust cool completely. Fill the tart with fresh mixed berries.
  7. In a small saucepan, heat the apricot jam until melted. Brush the melted jam over the berries.
