Preheat the oven to 375°F (190°C). In a large bowl, whisk together the flour, baking powder, salt, and sugar. In a separate bowl, beat the eggs, milk, and vegetable oil. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the carrots, zucchini, cheddar cheese, ham, and green onions. Spoon the batter into greased muffin cups, filling each about 3/4 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Once cooled, pack the muffins in a lunchbox for a delicious and nutritious meal on the go!
