Peel and grate the carrots.

In a mixing bowl, beat the eggs.

Add the grated carrots, flour, baking powder, salt, and olive oil to the bowl. Mix well.

Preheat the oven to 180°C (350°F).

Grease a baking dish and pour the carrot mixture into it.

Bake for 30 minutes or until the cakes are golden brown.
