Preheat the oven to 400°F (200°C).

Wash the potatoes and prick them with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until tender.

Meanwhile, heat olive oil in a skillet over medium heat. Add the shallots and cook until caramelized, about 10 minutes.

Once the potatoes are cool enough to handle, cut them in half lengthwise. Scoop out the flesh, leaving a thin shell.

In a bowl, mash the potato flesh with butter, sour cream, cheddar cheese, salt, and black pepper.

Stir in the caramelized shallots and fresh chives.

Spoon the mixture back into the potato shells.

Place the stuffed potatoes back on the baking sheet and bake for an additional 10 minutes, or until the tops are golden brown.
