  1. Preheat the oven to 375°F (190°C). Scrub the potatoes and pierce them with a fork. Place them on a baking sheet and bake for about 1 hour, or until tender. Remove the potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise. Scoop out the flesh of the potatoes, leaving a thin shell. Place the potato flesh in a bowl. Add butter, sour cream, cheddar cheese, chopped green onions, salt, and black pepper to the bowl. Mash the mixture until well combined. Spoon the potato mixture back into the potato shells. Place the stuffed potatoes back on the baking sheet. Bake for an additional 15-20 minutes, or until the cheese is melted and the tops are lightly browned. While the potatoes are baking, cook the bacon until crispy. Crumble the bacon into small pieces. Remove the potatoes from the oven and let them rest for 5-10 minutes. Serve the twice baked potatoes topped with crumbled bacon and additional chopped green onions, if desired.
