  3. In another bowl, mix the melted butter and brown sugar until well combined. Add the eggs and vanilla extract, and whisk until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Stir until just combined.
  5. Fold in the mashed banana, crushed pineapple, shredded coconut, and chopped walnuts.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
