In a separate bowl, melt the butter and let it cool slightly. Add the eggs, milk, and vanilla extract. Mix well.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Fold in the mashed banana, pineapple chunks, and shredded coconut.
