  1. In a medium bowl, combine graham cracker crumbs and melted butter. Press onto the bottom of a 9-inch springform pan.
  2. In a large mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth. Gradually add coconut milk, pineapple juice, and lime juice, mixing well after each addition.
  3. In a small microwave-safe bowl, sprinkle gelatin over 1/4 cup cold water. Let stand for 5 minutes, then microwave on high for 20 seconds, or until gelatin is dissolved. Stir into the cream cheese mixture.
  4. In another bowl, beat whipping cream and powdered sugar until stiff peaks form. Gently fold whipped cream into the cream cheese mixture.
  5. Pour the filling over the crust in the springform pan. Smooth the top with a spatula. Sprinkle toasted coconut flakes on top.
  6. Refrigerate for at least 2 hours, or until set. Garnish with fresh pineapple slices and lime zest before serving.
