  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition.
  4. Pour half of the cream cheese mixture over the crust. Drizzle half of the caramel sauce over the cream cheese mixture. Repeat with the remaining cream cheese mixture and caramel sauce.
  5. Bake for 55-60 minutes, or until the center is set and the top is lightly browned. Remove from the oven and let cool in the pan for 10 minutes.
  6. Run a knife around the edge of the pan to loosen the cheesecake. Remove the sides of the pan and let the cheesecake cool completely.
  7. Refrigerate for at least 3 hours, or overnight, before serving.
  8. Serve chilled with whipped cream and drizzle with additional caramel sauce, if desired.
