  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, pulse the crust ingredients until combined. Press the mixture into the bottom and up the sides of a tart pan. Bake for 10 minutes, then let it cool completely.
  3. In a saucepan, combine the mixed berries and sugar. Cook over medium heat until the berries release their juices and the sugar has dissolved. Remove from heat and let it cool.
  4. In a small bowl, sprinkle gelatin over 1/4 cup of cold water. Let it sit for 5 minutes to bloom.
  5. In a mixing bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  6. In a separate bowl, beat the gelatin mixture until smooth. Fold the gelatin into the whipped cream.
  7. Gently fold in the cooled berry mixture.
  8. Pour the mousse into the cooled tart crust and refrigerate for at least 2 hours, or until set.
  9. Before serving, dust the tart with powdered sugar. Enjoy!
