Tomato Soup with Puff Pastry Croutons
Tomato soup is believed to have originated in Spain in the 18th century and was introduced to the United States in the late 19th century.

Preheat the oven to 400°F (200°C).

In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and cook until softened.

Add chopped tomatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.

Meanwhile, roll out the puff pastry sheet and cut it into small squares. Place the squares on a baking sheet and bake in the preheated oven for about 15 minutes, or until golden brown.

Use an immersion blender to puree the soup until smooth. Stir in the heavy cream and season with salt and pepper.

Serve the tomato soup with puff pastry croutons and garnish with fresh basil leaves. Enjoy!
